In the 16th century, the English revamped the recipe with flour, eggs, and sweeteners, creating a lighter, more palatable version of the cookie. Queen Elizabeth I is known to have created the first gingerbread man, presenting dignitaries with gingerbread cookies baked in their own likeness to their delight.
